All grapes were picked at Domaine La Baronne. André and Suzette Lignères strive to create intense but balanced wines, protecting the biodiversity in their vineyards through low yields and biodynamic treatment of their vines. We cold macerated both the Carignan and Grenache grapes, after which the young lambic was macerated for more than five months. All macerations took place in oak barrels. We supplemented the blend with three-year-old lambic, bringing the weighted average age of this grape variety to more than 23 months. The final fruit content of the blend is 352 grams of grapes per liter of Druif.
